Ingredients - What You Need
- Matcha powder: commonly found in grocery stores or easily purchased online, matcha is now widely available, meaning you can make green mocktails galore! I'll leave some tips below on choosing the best matcha.
- Honey: I like using honey for this recipe, but you're welcome to use another sweetener if you wish. Maple syrup, regular sugar, monkfruit sweetener would all work well.
- Pineapple juice - and if you love this sweet fruit, you need to try my virgin pina coladas too!
- Coconut water: always choose a coconut water without added sugar - coconut water is sweet enough. Pst: if you love coconut water, try my coconut water mocktails too!
- Lemon juice: freshly squeezed will always be best, but bottled works too if you must.
- Soda water (optional): love bubbles? You can add some soda water to this if you wish.
How to make a green mocktail using matcha
- Whisk the matcha powder and boiling water together in a small bowl. Add the honey and stir until the honey is dissolved, then set aside to cool. Once cooled, add the matcha mixture to your shaker.
- Clap the mint together in your hands a few times and add to the mixture.
3. Add the pineapple juice and coconut water.
4. Add the lemon juice and a few cubes of ice.
5. replace the lid and shake well to combine. Strain over ice. You can leave as is or add a little soda water and stir if you prefer bubbles.
6. Garnish and serve immediately.
Choosing the best matcha for mocktails
If you haven't bought matcha before, it can be a little overwhelming - but it's honestly so easy once you know what you're looking for. My tips are:
Look for a bright green matcha: if you want the end result to be a gorgeous, vibrant green mocktail, choose the 'greenish' matcha you can find. Dull, yellow or brown match can indicate it's either not fresh or not great quality.
Choose ceremonial grade (if possible): you'll generally find two types of matcha - ceremonial, which is best for drinking in tea, lattes (and mocktails!), and culinary, which is more for baking and smoothies.
Check the ingredients: the only ingredient should be 100% pure matcha tea powder. Avoid anything with added sugars or other additives.

To make the mocktail
